Cheese Burger Sliders

Prep Time 20 minutes
Cook Time 30 minutes
Course: Appetizer, dinner

Ingredients
  

  • 1 lb Ground Beef
  • 1 packet Onion Soup Mix
  • 1 pack Hawaiian Rolls
  • 1.5 cups shredded Cheddar Cheese
  • 1 Diced Onion
  • 1 tbsp minced onion optional
  • 1.5 cups Mayo I use light mayo or olive oil mayo
  • 6 slices American Cheese
  • Pickles to top
  • 1 tbsp Melted Butter I use I cant believe its not butter
  • 1 tbsp Sesame Seeds

Equipment

  • 1 Pan to cook beef in
  • tin foil

Method
 

  1. Brown your beef with onion soup mix, diced onion and additional minced onion if you would like. I love onion so I added it all.
  2. While you let the beef cool layer tin foil and spray with non stick cooking spray.
  3. Once beef has cooled slightly add mayo and shredded cheese. Mix in well with beef.
  4. Put Hawaiian Roll on tin foil and cut in half. Layer beef mixture on top.
  5. Add on pickles then cheese. Wrap the slider in tin foil. Place on oven rack for 30 minutes on 350. It does cook better directly on the oven rack
  6. Let cool for about 10 mins and then brush your melted butter on top and sprinkle on sesame seeds.

Gigi’s Chili

This is a family favorite and one our picky 9 year

Cook Time 2 hours
Servings: 4
Course: dinner

Ingredients
  

  • 1 Onion optional
  • 1 Pepper Any color. I used green. optional
  • 2 packs Chili Seasoning
  • 15.5 oz Can Pinto Beans
  • 2 lbs Ground Beef
  • 28oz Can of Diced Tomatos
  • 14.5 oz Can of Diced Tomatos
  • 15 oz Can of Tomato Sauce
  • Garlic Powder
  • Onion Powder
  • Red Pepper flakes optional
  • Sour Cream I use light
  • Shredded Cheese

Equipment

  • 1 Crockpot
  • 1 Mini Crockpot optional- I use this for the kid friendly version

Method
 

  1. Brown two oz of ground beef in a pan. You do not need to season but can add salt and pepper if wanted.
  2. Add cooked ground beef, both cans of diced tomatos, tomato sauce, pinto beans (drained), and both packs of chili seasoning to crock pot. Mix together. If your child is like mine this is where I take out a small portion and add it to a mini crock pot.
  3. Dice onion and pepper and add to large crock pot.
  4. Add garlic powder and onion powder to taste. Add red pepper flake to preference of spice level. This should only be added to large crock pot.
  5. Cook on low for two hours. Serve with sour cream and cheese.
