Welcome to the first edition of my monthly recipe series!

I’m excited to share simple, satisfying recipes that I’ve personally tried—meals that taste just as good the next day. I’m not a big meal prep person, so I really value meals that are just as good the next day.

Each month, the number of recipes may vary, but trust me: if I can make them, you can too.

You won’t find every recipe packed with Greek yogurt or protein powder to be considered “healthy.” The goal here is to make small, sustainable swaps—maybe a lighter ingredient or a better portion—without overcomplicating things.

Remember, it’s not about perfection. It’s about progress, balance, and food that actually tastes good. Let’s keep it real—and delicious.

Apple Bake

Ingredients
  

  • 4 apples diced
  • 2 tsp apple pie spice
  • 1 tbsp whole wheat flour
  • 1/4 lemon
  • 1 tsp vanilla
  • pinch of salt
  • 1/4 cup whole wheat flour (topping)
  • 3/4 cup old fashion oats (topping)
  • 1.5 tbsp softened butter (topping)
  • pinch of salt (topping)
  • 1.5 tsp cinnamon (topping)
  • 1.5 tbsp maple syrup (topping)
  • 1/4 cup walnuts (topping)
  • 1 tsb vanilla (topping)

Equipment

  • 1 Oven safe dish

Method
 

  1. Combine apples, apple pie seasoning, whole wheat flour, lemon juice, vanilla, and pinch of salt to make your base. Once combined add to an oven safe dish.
  2. In another bowl add ingredients for topping. Combine whole wheat, flour, old fashioned oats, softened butter, vanilla, pinch of salt, cinnamon, maple syrup, and walnuts. Once combined add on top of the apple mixture in oven safe dish.
  3. Bake at 375 for 20-30 minutes.
  4. Top with greek yogurt to add protein.

Crock Pot Chicken Street Corn Tacos

Ingredients
  

  • 4 Chicken Breasts
  • 8 oz block of cream cheese (sub with light cream cheese)
  • 3 tbsp Mexican Seasoning (any will work)
  • 2 limes
  • 1 tbsp minced garlic
  • 1 cup Cotija cheese
  • 2 cans fire roasted corn
  • 1 package soft taco shells (I used the zero carb mission street taco sized shells)
  • cilantro

Equipment

  • 1 crock pot

Method
 

  1. Add chicken, cream cheese, mexican seasoning, juice of both limes, minced garlic, cotija cheese, both cans of fire roasted corn (drained) to the crock pot.
  2. Cook on low for four and a half hours
  3. Shred chicken and add to tortilla
  4. Top with cilantro and more cotija cheese

Broccoli Cheddar Beef Bowls

Ingredients
  

  • 1 lb ground beef
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp garlic powder
  • 1 tsp butter (I used light butter)
  • 1/2 medium onion (diced)
  • 1 medium carrot (grated)
  • 4 cloves garlic (I used minced)
  • 2 1/2 cups broccoli florets (chopped)
  • 1/2 cup milk
  • 2 cups heavy whipping cream
  • 1 tsp dijon mustard
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 3 cups sharp cheddar cheese (keep some to the side for topping)
  • 1 cup colby jack cheese
  • Rice or Pasta (I served over rice)

Equipment

  • 1 Pan

Method
 

  1. Brown beef in a large skillet, add 1/2 tsp salt, 1/4 tsp black pepper, and 1/2 tsp garlic powder. Once fully cooked remove from skillet and set to the side.
  2. In the skillet add butter, minced garlic, onion and carrot. Cook for around 3 minutes until softened.
  3. Add in broccoli and cook for 4-5 minutes until it is slightly tender.
  4. Return the beef to the skillet.
  5. Pour in milk and heavy whipping cream. Let simmer for 5-6 minutes stiring occasionally until thickened.
  6. Add seasoning. Stir in dijon mustard, 1/2 tsp salt, 1 tsp garlic powder, 1 tsp smoked paprika, and 1/4 tsp pepper.
  7. Reduce the heat to low to add in cheese. Add both cheeses in small amounts until melted. Keep some cheese out to top with.
  8. Put over rice or pasta.
